Baked Pork Chops with Apples and Cinnamon

from How to Lower your Cholesterol with French Gourmet Food by Chef Alain Braux

In France, cooking pork with apples is a wonderful way to add sweetness to an otherwise bland meat. It is a tasty and warming Autumn dish.
Servings: 4
Prep Time: 20 min.
Cooking time: 30 min.

4 medium pork chops
2 Tbsp butter
1/2 c. dry white wine
Sea salt to taste
Freshly ground black pepper to taste
4 celery leaves
4 bay leaves
2 Granny Smith apples, cored and diced
2 celery stalks, chopped fine
1 Tbsp butter, cut in small pieces
1 Tbsp brown sugar
4 oz. grated Swiss cheese

- Preheat your oven to 400 degrees F.

- Butter an ovenproof enameled cast iron or glass pan.

- Place your pork chops in the pan, leaving a little space in between; pour wine over pork chops. Sprinkle with salt and pepper to taste. Top each chop with a celery leaf and a bay leaf.

- In a separate bowl, toss together the diced apples, the chopped celery, butter and brown sugar. Add this mix to the pan with the pork chops, placing some of the mix between the pork chops.

- Bake together for about 30 minutes (depending on the size of your chops). Check for doneness.

- Take the pan out of the oven. Set your oven on broiler. Take out the celery and bay leaves. Sprinkle the Swiss cheese over your pork chops. Put back in the oven and broil until the cheese is melted and turns golden brown.

Voila - c'est magnifique! (<------I wrote that part). Enjoy!

  1. Sounds delicious! Thanks for sharing!

  2. Kathy,

Thanks for commenting. It's getting lonely in here, thanks to the holiday!! :)

  3. This does sound good! I may have to copy it down for when I go to my parent's house sometime. :)

  4. Krista,

It's very, very good. I don't usually like pork chops! Also, the kiddo loves it so that makes the recipe a huge winner. He's gotten a little picky, lately.

  5. Mmmmmmmm. Definitely one to try. Thanks for posting the recipe (and the very cute picture of a "pork chop). ;)

  6. YUM! I love some pork, and the New Yorkers in my house slather apple-something on anything pork related. Chuck makes stuffed baked pork chops with an apple chili glaze. OMG! This one sounds delicious and much more my speed. I'm all about a bake-it-all-together type of recipe.

  7. Les,

You're welcome. Gotta love that "pork chop" image, don'tcha? I thought that was so funny.

I'm not sure about the words "apple" and "chili" together. Kinda makes me cringe. I hope this one works for you. Even the kiddo loves it and he's getting picky, so it's a major thumbs-up in this house. I like toss-it-all-together cooking, too, btw. The best recipe I got from my mother is chicken breasts buried in Italian tomato soup. Juicy and perfect.

  8. If you want a quick and easy, toss it all together recipe, Nancy, try this one for taco soup. I made it on Friday when we had our neighbors over and their picky eleven-year-old had two huge bowls!

  9. Yummy! Can't wait to try this out. I'm a bit lost when it comes to preparing pork chops. :)

  10. Rosemary,

Hubby cooked this but he claims even I could handle it. That's really saying something. ;)

  11. I am working on a project for my business and I was looking for images of pork chops. Came across your blog. One. I will never look at pork chops the same again ... Thank you for the laugh... Two. This sounds delish! I will have to try it.

  12. Sara,

Isn't that pork chop image hilarious? The recipe is great, too. It's become one of our most frequently cooked recipes.
